Christmas Dinner, 1899

In contrast to last week’s story, an article in The Weekly Galesburg Mail of December 2, 1899, described a Victorian Christmas dinner. By that year the economy had improved following the Panic of 1893. Almost every man who wanted a job had one. Carl Sandburg wrote in his autobiography, Always the Young Strangers, that his family was coming near to being middle class.
 
In the 1880s and 1890s newspapers began publishing information about cooking, housekeeping and gardening. Cooking experts like Fannie Farmer, Sarah Rorer and others were conducting cooking classes in cities such as Boston. The field of home economics was developing as more scientific information about food, vitamins, cooking and sanitation became available.
 
During the reign of Queen Victoria in Britain (1837-1901) fashion became more ostentatious in home decoration. Recipes and meals became more elaborate. The French manner of cooking became quite influential in America. Chefs opened restaurants in the larger cities which became famous. A number of chefs wrote cookbooks which sold in the thousands.
 
The White House in Washington DC was known for elaborate meals served to dignitaries. The White House Cookbook was written by Mrs. F.L. Gillette and Hugo Ziemann, Steward of the White House. It became very popular among average homemakers. Another popular cookbook was written by Oscar Tschirky who worked at Delmontico’s and the Waldorf-Astoria Hotel in New York City.
 
Chinaware, glassware and silverware were decorated in amazing detail and was very colorful. There was a different type of knife or fork for almost every item on a menu. There were special containers for serving various kinds of foods and well as beverages.
 
The menu in the Mail article included eleven courses. It started with Blue Point Oysters, then cream of asparagus soup. An array of olives, English walnuts and gherkins was served next. The fish course was salmon with tartar sauce and Potatoes a la Windsor. (I tried to find a recipe, but my collection of cookbooks didn’t reveal any. The dish may have been similar to scalloped potatoes.) Sweetbreads were served next followed by sorbet (an ice) and punch au Kirsch (cherry brandy).
 
The main part of the menu—roast turkey was served with cranberry sauce and celery salad (with oil and vinegar dressing). The vegetable course of string beans, potato croquettes and French peas came next. The dessert course included cheesecake, plum pudding and vanilla ice. After that, fruit, coffee and cakes were served. Appropriate wines may have been served with the different courses.
 
The Victorian dinner required plenty of time between each course for the guests to rest and digest the food. Good manners and the art of conversation made the whole affair pleasant and entertaining. Floral decorations on the dining table and placed around the room created a festive atmosphere. A Christmas tree may have inhabited a corner of the dining room.
 
No mention is made in the newspaper article about the amount of work being done in the kitchen to prepare all of this food. Someone had to turn the handle of the ice cream freezer for the sorbet plus much other labor.
